Chadwick "Chad" Johnson founded Johnson Custom Smokers in Ennis, Texas in 2003, building a full lineup of backyard, competition and catering smokers — all on the same Reverse Flow concept, from the smallest tailgate rig up to gooseneck catering trailers.

The Engineering

The Reverse Flow
Concept.

A removable, adjustable tube directs heat from the firebox to the far end of the main chamber. From there it travels back across the cooking racks toward stacks set at grate level — so every rack cooks at the same temperature, not just the one closest to the fire.

Normal offsets run hot on one end and cold on the other. A Johnson smoker doesn't — and once it's dialed in, it needs no adjusting.

Every chamber starts as raw steel pipe stock, cut and shaped in the Ennis shop. Scroll to watch the cut run — same steel that ends up ½" thick on the firebox.
